Credit for this dish goes to one of cf's relatives; in fact he's the Godfather! - Our man in the Apple Ha ha's. It's one of the many good things he brought back from India. But as they say, enough tosh, down to the dirty:
(Serves 4 -6)
6 large potatoes
4 tablespoons oil
1 teaspoon salt
1 ½ teaspoon turmeric
1 teaspoon cumin seed
2 small cartons plain yoghurt
Peel potatoes, cut into chunks and parboil. Drain and put to one side. Heat oil in heavy-bottomed pan; add turmeric, cumin seeds and salt. Toast for a few seconds - be careful not to burn as turmeric is horrible when singed. Add potatoes and turn thoroughly in oil and spices. Pour in yoghurt and turn again. Turn down heat and allow to simmer gently for 5 - 10 minutes to finish cooking, or turn into an oven-proof dish and finish in a medium hot oven.
You can substitute a cauliflower for the potatoes in this recipe, or even make it with both.
