Gazpacho Soup

 

3 red peppers, chopped

3 green peppers, chopped

1 clove of garlic

6 large tomatoes, peeled

6 cucumbers, peeled

½ onion

2 teaspoons salt

2 teaspoons pepper

2 teaspoons vinegar

2 litres cold water

2 soup spoons olive oil

Chop the pepper, garlic, tomatoes and cucumbers into a bowl. Add the olive oil, salt, pepper, vinegar and a bit of water to mix.

Pass through the mixer then add the water. Ice can also be added. Leave in the fridge before serving.

To make the gazpacho thicker, add 2 slices of dry white bread when passing the soup through the mixer.

For a zesty evening add a bottle of vodka, sit back and enjoy.
